Carefully gathered by hand from centuries old trees without mechanical means, these olives are taken to a nearby mill within a few hours from picking to maintain its nutrition characteristics and guarantee the lowest olive oil acidity (less than 0.3%). The olives are immediately cold processed and malaxed less than 20 minutes to preserve their lovely fruity and spicy flavor and distinctive aroma.
